North American Teff

A Versatile, Gluten-Free Whole Grain With High Nutrition Value

Rather than rely on international supply for this power packed grain, Bridgewell has partnered with one of the country’s premier teff growers to provide locally grown North American Teff. One of the world’s smallest grain seeds (1/150th the size of wheat), Teff is a high quality, low cost ingredient that can be used in a variety of food and bakery applications. It is kosher certified and follows HACCP protocol. We have product available for shipment now in commercial quantities.

Historically, Teff is a rapidly growing, annual grass (eragrostis tef) from the Ethiopian highlands in Northeast Africa. Widely used as a versatile grain in Ethiopians' diet, Teff packs a high concentration of nutrition – carbohydrates, calcium, fiber, and protein as well as excellent amino acids and mineral content like iron. Teff is typically not hulled, so its germ and bran content remains which provide rich, natural nutrition.

Cooked Teff can add body to puddings or pastries. Due to its nutty aroma and almond-like flavor, Ultra-Roasted Teff grain and flour can be substituted for nuts and grains in food applications. Teff provides natural sweetness and flavor when making breads, biscuits, cookies, cakes, stir-fry dishes and casseroles. Additionally, Teff’s versatility comes through as a thickener for soups, stews and gravies.
